Tres Leches Cake is a rich and decadent dessert that originates from Latin America. The name translates to "three milks," which refers to the blend of condensed milk, evaporated milk, and heavy cream that is poured over the sponge cake, creating a moist and irresistible texture. This cake is perfect for celebrations and gatherings, offering a sweet, creamy flavor that melts in your mouth.

Ingredients

For the cake:

1 cup (130 g) all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

5 large eggs, separated

1 cup (200 g) granulated sugar

1/3 cup (80 ml) whole milk

1 tsp vanilla extract

For the milk mixture:

1 can (12 oz / 355 ml) evaporated milk

1 can (14 oz / 396 ml) sweetened condensed milk

1/2 cup (120 ml) heavy cream

For the whipped topping:

1 cup (240 ml) heavy whipping cream

3 tbsp powdered sugar

1/2 tsp vanilla extract

Instructions

Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch (23x33 cm) baking pan.

Make the Cake Batter: In a bowl, whisk together flour, baking powder, and salt. In a separate large bowl, beat the egg yolks with 3/4 cup (150 g) of sugar until pale and fluffy. Stir in the milk and vanilla extract.

Beat the Egg Whites: In another bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup (50 g) of sugar, continuing to beat until stiff peaks form.

Combine and Bake: Gently fold the flour mixture into the egg yolk mixture. Then, carefully fold the egg whites into the batter until fully combined. Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick comes out clean.

Make the Milk Mixture: While the cake bakes, mix together the evaporated milk, condensed milk, and heavy cream in a bowl.

Soak the Cake: Once the cake is done, let it cool slightly. Use a fork to poke holes all over the cake. Slowly pour the milk mixture over the cake, ensuring it’s fully absorbed. Refrigerate the cake for at least 1 hour, or overnight for best results.

Whip the Topping: In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Finish and Serve: Spread the whipped cream topping evenly over the cake. Garnish with fresh fruit or cinnamon if desired. Slice and serve chilled.
