1 lb (0.45 kg) Beef, cubed

1/2 cup Palm Oil

1 cup Egusi (ground melon seeds)

1 Onion, finely chopped

2 Tomatoes, blended

2 cups Spinach or Bitterleaf, chopped

2 tbsp Ground Crayfish

2 Scotch Bonnet Peppers, blended

2 cups Stock (Beef or Chicken)

Salt and Pepper to taste


In a pot, heat palm oil and sauté finely chopped onion until translucent. Add cubed beef and brown on all sides. Stir in the egusi (ground melon seeds) and cook until fragrant. Pour in the blended tomatoes and scotch bonnet peppers, stirring well. Add ground crayfish and stock, bringing the soup to a gentle simmer. Let the soup cook for about 20-30 minutes until the flavors meld. Stir in chopped spinach or bitterleaf, allowing it to wilt into the soup. Season with salt and pepper to taste.
