1 whole chicken (about 3.3 lb / 1.5 kg)
1 ½ cups (0.15 kg) walnuts, finely ground
2 large onions, finely chopped
½ cup (0.12 kg) dried sour plums or prunes, chopped
2 tbsp pomegranate molasses (or 1 tbsp lemon juice)
½ tsp salt
½ tsp black pepper
½ tsp turmeric
2 tbsp butter (0.03 kg), melted
For the Fish Lavangi:
1 whole fish (about 2.2 lb / 1 kg, such as sturgeon or seabass)
1 cup (0.1 kg) walnuts, finely ground
1 large onion, finely chopped
¼ cup (0.06 kg) dried sour plums or prunes, chopped
1 tbsp pomegranate molasses
½ tsp salt
½ tsp black pepper
½ tsp turmeric
Instructions:
Step 1: Prepare the Filling In a pan, sauté the onions until golden. Add the ground walnuts and stir for a few minutes. Mix in the dried plums, pomegranate molasses, salt, black pepper, and turmeric. Cook for 2-3 minutes and let the mixture cool.
Step 2: Stuff the Chicken or Fish Preheat the oven to 375°F (190°C). Clean the chicken or fish thoroughly and pat dry. Stuff the cavity with the prepared filling and secure with toothpicks or kitchen twine.
Step 3: Bake the Lavangi Place the stuffed chicken or fish in a baking dish. Brush the outside with melted butter (for chicken) or a bit of oil (for fish). Bake for about 1 hour 30 minutes for chicken or 40-50 minutes for fish, until golden and fully cooked.
Step 4: Serve Let the lavangi rest for a few minutes before slicing. Serve with rice or fresh herbs.
