Ingredients
- 1 medium breadfruit
- 1/2 lb (about 225 g) salted codfish (saltfish)
- 2 tablespoons vegetable oil or coconut oil
- 1 medium onion, sliced
- 1 tomato, chopped
- 1 small bell pepper, sliced
- 2 cloves garlic, minced
- 2 sprigs thyme
- 1 scallion, chopped
- 1 small hot pepper (optional), sliced
- Salt and black pepper to taste

Prepare the Saltfish
Soak the salted codfish overnight in cold water to remove excess salt. Alternatively, boil it in fresh water for 10–15 minutes, then drain and flake into small pieces. Set aside.

Prepare the Breadfruit
Peel the breadfruit, remove the core, and cut it into medium chunks. Boil in salted water for about 20–25 minutes, or until tender. Drain and set aside, or alternatively, roast the whole breadfruit until the skin is charred and the inside is soft, then peel and cut into pieces.

Sauté the Seasonings
In a large skillet, heat oil over medium heat. Add the onion, tomato, bell pepper, garlic, thyme, scallion, and hot pepper. Sauté for 3–4 minutes until fragrant and the vegetables are soft.

Combine and Cook
Add the flaked saltfish to the pan, stirring well to combine with the seasonings. Cook for another 3–4 minutes. Add the boiled or roasted breadfruit pieces and toss gently to coat them with the saltfish mixture. Continue cooking for 5 minutes, allowing the flavors to blend. Adjust seasoning with salt and black pepper if needed.
