Chupe de Camarones (Peruvian Shrimp Chowder)

Ingredients

  • 1 teaspoon paprika
  • 6 cups (1.5 L) water or shrimp broth
  • 2 medium potatoes, peeled and diced

  • 1/2 cup green peas
  • 1/2 cup white rice
  • 1/2 cup evaporated milk or cream
  • 1/2 cup fresh cheese (queso fresco), crumbled
  • 2 eggs
  • Salt and pepper to taste
  • Fresh oregano or parsley, chopped (for garnish)

Instructions

  1. Prepare the Shrimp Broth

    Place the shrimp shells in a pot with 6 cups of water. Bring to a boil, then simmer for 15–20 minutes. Strain and discard the shells, keeping the broth warm.

    In a large pot, heat oil or butter over medium heat. Add onion and garlic, sauté until fragrant and translucent. Stir in ají panca paste and paprika, cooking for another minute to release the aromas.
