Instructions

Prepare the Base: In a large pot, combine the milk and water. Heat the mixture over medium heat, bringing it to a gentle simmer. Be sure not to let the milk boil.

Add Seasonings: Once the milk starts to simmer, add the chopped green onions and season with salt and pepper to taste. Stir occasionally and let it cook for about 5 minutes until the onions soften.

Poach the Eggs: Carefully crack each egg into the simmering milk mixture, one at a time. Poach the eggs for 3-4 minutes, or until the whites are set and the yolks are still runny. If you prefer firmer yolks, cook them a little longer.
