Ingredients
2 cups (0.4 kg) semolina
1 cup (0.2 kg) granulated sugar
1 cup (0.2 kg) unsweetened shredded coconut
1 cup (240 ml) plain yogurt
1/2 cup (120 ml) melted butter or ghee
1 tsp (5 g) baking powder
1 tsp (5 g) vanilla extract
1/2 cup (120 ml) milk (optional, for adjusting consistency)
20-25 whole almonds for garnish
For the Syrup
1 1/2 cups (0.3 kg) sugar
1 cup (240 ml) water
1 tbsp (15 ml) lemon juice
1 tbsp (15 ml) rosewater or orange blossom water (optional)
Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch (23x33 cm) baking dish with butter or oil.
Make the Batter: In a large mixing bowl, combine the semolina, sugar, shredded coconut, baking powder, and vanilla extract. Stir in the melted butter or ghee and yogurt. Mix until all the ingredients are well combined. If the batter is too thick, you can add up to 1/2 cup of milk to achieve a smooth consistency.
Pour and Score: Pour the batter into the greased baking dish, spreading it evenly with a spatula. Use a knife to score the surface of the batter into diamond or square shapes. Place an almond in the center of each piece for garnish.
Bake the Basbousa: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Prepare the Syrup: While the Basbousa is baking, prepare the syrup. In a small saucepan, combine the sugar, water, and lemon juice. Bring to a boil, then reduce the heat and let it simmer for 10 minutes. Remove from heat and stir in the rosewater or orange blossom water if using.
Soak the Basbousa: Once the Basbousa is out of the oven, immediately pour the warm syrup evenly over the cake. Allow the cake to soak up the syrup completely before serving.
