Älplermagronen (Swiss Alpine Macaroni)

Ingredients
- 300 g macaroni or short pasta
- 300 g potatoes, peeled and diced
- 200 g Swiss cheese (such as Gruyère or Emmental), grated
- 200 ml heavy cream
- 1 onion, finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
- Optional: 50 g crispy bacon, chopped

Cook the Pasta and Potatoes
Bring a large pot of salted water to a boil. Add the diced potatoes and cook for 5 minutes. Then add the pasta and cook together until both are tender, about 8–10 more minutes. Drain and set aside.

Prepare the Onions and Bacon
While the pasta and potatoes are cooking, heat butter in a skillet over medium heat. Add the chopped onions (and bacon, if using) and sauté until golden brown and caramelized.

Combine Ingredients
In a large mixing bowl or the pot used for pasta, combine the cooked pasta and potatoes with the grated cheese and cream. Stir well until the cheese melts and forms a creamy sauce. Season with salt and pepper to taste.
