Ingredients

1 bunch cilantro, chopped
6 cups (1.4 liters) water or vegetable broth
2 eggs (optional)
1 jalapeño pepper, seeded and minced (optional, for heat)
1 tsp salt
1 lime, cut into wedges

Instructions
Prepare the Black Beans: If using dried beans, soak them overnight in water. Drain and rinse. Place them in a large pot with 6 cups of water or broth. Bring to a boil, then reduce the heat and simmer for about 1-1.5 hours, or until the beans are tender. If using cooked beans, skip this step.
Sauté Vegetables: In a separate pan, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper, sautéing until softened and fragrant, about 5 minutes.
Combine and Simmer: Add the sautéed vegetables to the pot of beans. Stir in cumin, oregano, salt, and jalapeño (if using). Let the soup simmer for 20-30 minutes to allow the flavors to blend.
Optional Poached Eggs: If you’d like to add eggs, crack them directly into the soup during the last 10 minutes of cooking. Cover the pot and let the eggs poach until the whites are set and the yolks are still soft.
