Ingredients:
2 cups basmati rice
1 lb chicken breasts, cooked and shredded
1 cup plain yogurt
3 eggs
1/4 cup vegetable oil
1 teaspoon ground saffron

1/2 cup barberries (optional)
1/4 cup slivered almonds (optional)
Instructions:
Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 1 hour, then drain. In a large bowl, mix the shredded chicken, yogurt, eggs, vegetable oil, ground saffron, salt, and pepper until well combined. Preheat your oven to 350°F (175°C). Grease a baking dish with oil and line the bottom with parchment paper. Spread half of the rice evenly on the bottom of the dish. Spoon the chicken mixture over the rice layer, spreading it out evenly. Cover the chicken mixture with the remaining rice, pressing it down gently. Cover the dish with aluminum foil and bake in the preheated oven for 1 hour. Remove the foil and bake for an additional 10-15 minutes, or until the rice is golden brown and crispy on the edges. Let the tahchin cool for a few minutes before slicing it into squares. Garnish with barberries and slivered almonds, if desired, before serving.
