1 tbsp (10 g) Sichuan peppercorns

Other Ingredients

2 tbsp (30 ml) vegetable oil

2 cloves garlic, minced

1-inch (2.5 cm) piece of ginger, minced

2 green onions, chopped

1 tsp (5 ml) sesame oil (optional)

Salt and pepper, to taste

Instructions

Marinate the Chicken In a bowl, combine soy sauce, Shaoxing wine, cornstarch, salt, and pepper. Add the diced chicken, tossing to coat. Allow to marinate for 15-20 minutes for the best flavor.

Prepare the Spice Mix Break the dried chilies in half (if desired, remove seeds for milder heat). Mix with Sichuan peppercorns and set aside.

Cook the Chicken

Heat the vegetable oil in a wok over high heat. Once hot, add the marinated chicken and stir-fry until golden and crispy. Remove chicken and set aside.
