Romazava (Malagasy Beef and Greens Stew)

Ingredients

  • 1 lb (450 g) beef, cut into bite-sized pieces
  • 1/2 lb (225 g) pork (optional), cut into small pieces
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 teaspoon ginger, grated
  • 2–3 tomatoes, chopped
  • 4 cups water or beef broth
  • 1 bunch leafy greens (such as anamalao, mustard greens, or spinach)
  • 2–3 stalks green onions, chopped
  • 1–2 chili peppers, sliced (optional, for heat)
  • Salt and pepper to taste

Instructions

  1. Prepare the Meat

    In a large pot, combine the beef (and pork if using) with garlic, onion, and ginger. Sauté over medium heat until the meat is lightly browned and the aromatics are fragrant.

  2. Add Tomatoes and Simmer

    Add the chopped tomatoes and cook for a few minutes until softened. Pour in the water or beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 1–1.5 hours, or until the meat is tender.

  3. Add Greens and Season

    Add the leafy greens and green onions to the pot. Stir in chili peppers if using, and season with salt and pepper. Cook for another 10–15 minutes until the greens are wilted and tender.

  4. Serve

    Serve Romazava hot, traditionally with steamed rice to soak up the flavorful broth.
