1/2 lb (250 g) peanuts (optional)
1/4 lb (125 g) shallots, thinly sliced
4 cloves garlic, minced
1 stalk lemongrass, finely chopped
2 teaspoons (10 g) ground turmeric
2 teaspoons (10 g) ground coriander
1 tablespoon (15 g) palm sugar or brown sugar
2 red chilies, finely chopped (optional for heat)
Salt to taste
Instructions:
Prepare the Coconut: Toast the shredded coconut in a dry pan over medium heat until golden and fragrant. Stir frequently to prevent burning. Remove from heat and set aside.
Cook the Aromatics: Heat the vegetable oil in a large skillet or wok over medium heat. Add the shallots, garlic, lemongrass, and chilies. Sauté until fragrant and the shallots turn golden brown.
Combine Ingredients: Add the ground turmeric, coriander, and palm sugar to the skillet. Stir until the spices are evenly distributed.
Incorporate the Coconut: Return the toasted coconut to the skillet. Mix well with the spices and aromatics, ensuring every flake is coated. Add the peanuts at this stage if using.
Season and Toast: Add salt to taste and continue to toast the mixture for an additional 5-10 minutes, stirring frequently, until all ingredients are well combined and the coconut achieves a rich golden color.
Cool Down: Remove from heat and allow the Serondeng to cool completely before serving or storing in an airtight container.
Serving: Serondeng is incredibly versatile. Sprinkle it over steamed rice, noodles, or soups for added flavor, or serve it as a snack. This recipe makes enough to fill a medium jar, ensuring you have plenty to enjoy or share.
