2 red chilies, finely chopped (optional for heat)

Instructions:

Prepare the Coconut: Toast the shredded coconut in a dry pan over medium heat until golden and fragrant. Stir frequently to prevent burning. Remove from heat and set aside.

Cook the Aromatics: Heat the vegetable oil in a large skillet or wok over medium heat. Add the shallots, garlic, lemongrass, and chilies. Sauté until fragrant and the shallots turn golden brown.

Combine Ingredients: Add the ground turmeric, coriander, and palm sugar to the skillet. Stir until the spices are evenly distributed.

Incorporate the Coconut: Return the toasted coconut to the skillet. Mix well with the spices and aromatics, ensuring every flake is coated. Add the peanuts at this stage if using.

Season and Toast: Add salt to taste and continue to toast the mixture for an additional 5-10 minutes, stirring frequently, until all ingredients are well combined and the coconut achieves a rich golden color.

Cool Down: Remove from heat and allow the Serondeng to cool completely before serving or storing in an airtight container.
