Instructions

Prepare the Chocolate Sponge
  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. Beat the eggs and sugar together until pale and fluffy.
  3. Sift together flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined.
  4. Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted comes out clean. Let cool completely.

  2. Dissolve cornstarch in a small amount of water, then stir into the cherries. Cook until thickened, about 2–3 minutes.
  3. Remove from heat and stir in Kirsch. Let cool completely.
Whip the Cream
  1. In a chilled bowl, beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Assemble the Cake
  1. Place one chocolate sponge layer on a serving plate. Spread half of the cherry filling evenly on top.
  2. Spread a layer of whipped cream over the cherries.
  3. Place the second sponge layer on top and cover the entire cake with the remaining whipped cream.
  4. Decorate with chocolate shavings and fresh cherries.
