Ingredients
For the Roast Beef
- 3–4 lb (1.5–2 kg) beef roast (such as sirloin, rib, or rump)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 2 teaspoons Dijon mustard (optional)
- 2 cloves garlic, minced
- 2 sprigs fresh rosemary or thyme
For the Yorkshire Pudding
- 1 cup all-purpose flour
- 1 cup milk
- 3 large eggs
- ½ teaspoon salt
- 2–3 tablespoons beef drippings or vegetable oil
Instructions
-
Prepare the Roast Beef
Preheat your oven to 450°F (230°C). Rub the beef with olive oil, salt, pepper, garlic, and mustard. Add fresh herbs if desired. Place the beef in a roasting pan and roast for 15 minutes to develop a golden crust.
Lower the oven temperature to 350°F (175°C) and continue roasting for about 1¼ to 1½ hours, or until the internal temperature reaches your preferred doneness (125°F for rare, 135°F for medium-rare, 145°F for medium).
Remove the beef from the oven, cover loosely with foil, and let it rest for 15–20 minutes before slicing.
-
Make the Yorkshire Pudding Batter
In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Let the batter rest for at least 30 minutes at room temperature.
-
Bake the Yorkshire Puddings
Increase oven temperature to 425°F (220°C). Pour a small amount of beef drippings or oil into each cup of a muffin tin. Place the tin in the oven until the fat is sizzling hot.
Carefully pour the batter evenly into the hot muffin cups (about halfway full). Bake for 20–25 minutes, without opening the oven door, until the puddings are puffed and golden brown.
-
Serve
Slice the roast beef thinly and serve with hot Yorkshire puddings, a drizzle of rich beef gravy, and your favorite sides such as roasted potatoes, carrots, or steamed green beans.
