2 lbs (0.9 kg) lamb shoulder, cubed

2 cups of basmati rice

1 large onion, finely chopped

1 teaspoon of ground cloves

1 teaspoon of ground nutmeg

1/4 cup of chopped almonds

1/4 cup of raisins

Salt and pepper to taste

Olive oil for cooking

In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until golden brown. Add cubed lamb shoulder to the pot, cooking until browned on all sides. To serve, arrange the cooked rice on a platter, top with the tender lamb, and sprinkle with the toasted almonds, raisins, and fresh parsley.
