Ingredients:
For the Dough:
3 cups (0.9 lb / 400 g) all-purpose flour
¾ cup (0.18 l) warm water
1 tbsp olive oil
½ tsp salt
For the Meat Filling:
½ lb (250 g) ground lamb or beef
1 small onion, finely chopped
1 tbsp butter
½ tsp salt
½ tsp black pepper
½ tsp ground sumac
For the Herb Filling (Alternative Option):
2 cups (0.4 lb / 180 g) fresh herbs (coriander, parsley, dill, green onions), chopped
½ cup (0.1 lb / 50 g) feta cheese (optional)
½ tsp salt
Instructions:
Step 1: Prepare the Dough In a large bowl, combine the flour and salt. Gradually add warm water and olive oil, kneading until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.
Step 2: Prepare the Filling For the meat filling: Sauté the chopped onion in butter, then add the ground meat, salt, black pepper, and sumac. Cook until browned. For the herb filling: Mix the chopped herbs with salt and optional feta cheese.
Step 3: Assemble the Qutab Divide the dough into small balls and roll each into a thin circle (about 8 inches / 20 cm in diameter). Place the filling on one half of the dough, leaving space around the edges. Fold over and press the edges to seal.
Step 4: Cook the Qutab Heat a dry pan or griddle over medium heat. Cook each Qutab for 1-2 minutes per side until golden brown. Brush with butter while warm.
Serving: Serve Qutab hot with yogurt, sumac, and melted butter. It pairs perfectly with a glass of Azerbaijani tea.
