Ingredients:
For the Pounded Yam:
2 lb (1 kg) yam tubers or yam flour
Water, as needed
For the Egusi Soup:
1 lb (0.45 kg) ground melon seeds (Egusi)
1 lb (0.45 kg) assorted meats (beef, goat, or chicken)
0.5 lb (0.22 kg) smoked fish
0.5 cup (0.1 lb / 45 g) palm oil
1 medium onion, chopped (0.25 lb / 0.11 kg)
2 cups (1.1 lb / 0.5 kg) chopped spinach or bitter leaf
2 tablespoons ground crayfish
1 teaspoon ground pepper
2 stock cubes (bouillon)
Salt to taste
4 cups (1 liter) water
Instructions:
Step 1: Prepare the Pounded Yam
Boil the Yam: Peel and cut the yam tubers into chunks. Boil in water until soft. If using yam flour, bring water to a boil, reduce the heat, and gradually stir in the flour.
Pound or Mix: For yam tubers, pound the cooked yam using a mortar and pestle until smooth and stretchy. If using yam flour, stir continuously until it forms a smooth, dough-like consistency.
Set Aside: Divide into serving portions and cover to keep warm.
Step 2: Make the Egusi Soup
Cook the Meat: In a pot, boil the assorted meats with salt, stock cubes, and water until tender. Reserve the stock.
Prepare the Egusi Mixture: Mix the ground Egusi with a small amount of water to form a thick paste.
Cook the Soup Base: Heat palm oil in a large pot and sauté the onions until fragrant. Add the Egusi paste and fry for about 5 minutes.
Add Liquid: Pour in the reserved meat stock and stir well to combine. Let it cook for 10 minutes.
Incorporate Ingredients: Add the cooked meats, smoked fish, ground crayfish, ground pepper, and spinach. Stir and cook for another 10 minutes. Adjust seasoning with salt if needed.
Serving: Serve the Egusi soup hot with portions of pounded yam. This dish is traditionally eaten with your hands, using the pounded yam to scoop up the soup.
