1 lb (0.45 kg) beef or lamb, cut into bite-sized pieces
1 medium onion, chopped (0.25 lb / 0.11 kg)
2 medium tomatoes, chopped (0.5 lb / 0.22 kg)
0.5 cup (0.12 liter) palm oil
1 tablespoon ground crayfish (optional)
2 tablespoons tomato paste
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon ground chili pepper (optional, for heat)
2 stock cubes (bouillon)
Salt to taste
3 cups (0.7 liter) water
Instructions:
Step 1: Prepare the Meat
Cook the Meat: In a pot, boil the beef or lamb with half of the chopped onions, stock cubes, and a pinch of salt. Simmer until the meat is tender. Reserve the stock for later use.
Step 2: Cook the Spinach
Prepare the Spinach: If using fresh spinach, wash and chop it finely. If using frozen spinach, squeeze out excess water.
Blanch (Optional): Blanch the spinach in boiling water for 1-2 minutes, then drain and set aside.
Step 3: Prepare the Stew
Heat the Palm Oil: In a large pot, heat the palm oil over medium heat. Sauté the remaining onions until soft and translucent.
Add Aromatics and Tomatoes: Stir in the garlic, ginger, and chili pepper (if using). Add the chopped tomatoes and tomato paste. Cook for about 5 minutes until the mixture thickens.
Incorporate the Meat and Stock: Add the cooked meat along with the reserved stock. Simmer for 10 minutes to allow the flavors to blend.
Add the Spinach: Stir in the spinach and ground crayfish (if using). Cook for an additional 5-7 minutes, stirring occasionally. Adjust seasoning with salt.
Serving: Serve Gboma Dessi hot over steamed rice, fufu, or boiled yams. It pairs wonderfully with other Togolese side dishes and is best enjoyed fresh.
