1 sheep's head, cleaned and split in half 2 sheep's feet, cleaned 1 lb (450g) sheep's stomach, cleaned and cut into pieces 1 lb (450g) sheep's intestines, cleaned and cut into pieces 1 cup rice 1 onion, chopped 4 cloves garlic, minced 1 teaspoon ground cumin 1 teaspoon ground coriander Salt and pepper to taste Lemon wedges for serving Chopped fresh parsley for garnish Instructions:
Rinse the sheep's head, feet, stomach, and intestines thoroughly under cold water. Place the sheep's head, feet, stomach, and intestines in a large stockpot and cover with water. Bring the water to a boil over high heat, then reduce the heat to low and simmer for about 4-6 hours, or until the meat is tender and falling off the bones. Skim off any foam or impurities that rise to the surface of the broth during cooking. Once the meat is tender, remove the sheep's head, feet, stomach, and intestines from the pot and set aside to cool slightly. Remove the meat from the sheep's head and chop it into bite-sized pieces. Discard the bones. Return the chopped meat to the pot of broth and add the rice, chopped onion, minced garlic, ground cumin, ground coriander, salt, and pepper. Simmer the soup for an additional 30-40 minutes, or until the rice is cooked through and the flavors have melded together.
