2 lb (0.9 kg) chicken thighs or drumsticks
1 cup (240 ml) peanut butter (unsweetened)

2 tbsp vegetable oil
2 cups (480 ml) chicken broth
Salt and pepper to taste
1 tsp ground cumin
1 tsp ground coriander
1-2 hot peppers, chopped (optional)
Instructions
Prepare the Chicken: In a large pot, heat vegetable oil over medium heat. Season the chicken with salt and pepper, and brown it in the pot until it’s golden on all sides. Remove the chicken and set aside.
Sauté the Vegetables: Add chopped onion, garlic, and bell pepper to the pot. Sauté until the onions are translucent and the vegetables have softened.
