Mikate (Congolese Beignets)

Mikate, also known as Congolese beignets, are soft and fluffy doughnuts popular in the Democratic Republic of the Congo. These treats are slightly sweet, crispy on the outside, and fluffy on the inside, making them perfect as a snack or dessert. Mikate is often enjoyed fresh with a sprinkle of powdered sugar or a drizzle of honey.

Ingredients

  • 2 cups (0.5 kg) all-purpose flour
  • 1/2 cup (0.12 kg) sugar
  • 1 packet (7 g) active dry yeast
  • 1/4 tsp salt
  • 1 cup (240 ml) warm water
  • Vegetable oil for frying
  • Optional: powdered sugar or honey for serving

Instructions

  1. Prepare the Dough

    In a large bowl, combine the flour, sugar, salt, and yeast. Slowly add warm water, mixing until you form a smooth, sticky dough.

  2. Let the Dough Rise

    Cover the bowl with a cloth and let the dough rise in a warm place for about 1 hour, or until it doubles in size.

  3. Heat the Oil

    In a deep skillet or pot, heat the vegetable oil to 350°F (180°C).

  4. Form the Mikate

    Once the dough has risen, use a spoon to scoop out small portions. Drop each portion carefully into the hot oil.

  5. Fry the Doughnuts

    Fry the mikate until they turn golden brown on all sides, about 2–3 minutes per side. Remove them from the oil and place on paper towels to drain.

  6. Serve

    Serve warm, sprinkled with powdered sugar or drizzled with honey.
