1 lb beef, cut into chunks

1 lb pork, cut into chunks

1 lb chicken, cut into pieces

1 lb pumpkin, peeled and cubed

1 lb sweet potatoes, peeled and cubed

1 lb cassava, peeled and cut into chunks

1 onion, chopped

2 cloves garlic, minced

1 tablespoon curry powder

1 tablespoon dried thyme

Salt and pepper to taste

Water, as needed

Hot pepper sauce (optional, for extra heat)

In a large pot or Dutch oven, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened. Add the beef, pork, and chicken to the pot, and brown them on all sides. Stir in the curry powder and dried thyme, and cook for a few minutes until fragrant. Add enough water to cover the meat, and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 30 minutes. Add the pumpkin, sweet potatoes, and cassava to the pot, and continue simmering until all the ingredients are tender and cooked through (about 20-30 minutes). Season with salt and pepper to taste, and adjust the consistency of the stew by adding more water if needed. Serve the Metemgee hot, with hot pepper sauce on the side for those who like it spicy.

Metemgee is traditionally served hot, either on its own or accompanied by rice, bread, or fried plantains. Garnish with fresh herbs like parsley or cilantro for extra flavor and visual appeal.

Metemgee is a celebration of the vibrant flavors and culinary traditions of Guyana. With its hearty combination of meats, vegetables, and spices, this flavorful stew invites you to experience the warmth and hospitality of Guyanese cuisine.
