Margoog (Saudi Vegetable and Meat Stew)

Ingredients
- 500 g lamb or beef, cut into cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 large tomatoes, chopped
- 2 carrots, sliced
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- Salt and pepper to taste
- 4 cups water or beef broth
- 1 cup whole wheat flour
- 1/2 teaspoon salt (for dough)
- Optional: fresh cilantro or parsley for garnish

Prepare the Meat and Vegetables
Heat vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent. Stir in garlic, then add the meat cubes. Brown the meat on all sides for about 5–7 minutes. Add chopped tomatoes, carrots, zucchini, and bell pepper. Season with cumin, coriander, turmeric, salt, and pepper. Stir well to combine.

Simmer the Stew
Pour in the water or broth, bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours, or until the meat is tender and the vegetables are cooked through.

In a bowl, mix whole wheat flour with 1/2 teaspoon salt and enough water to form a firm but pliable dough. Knead for a few minutes until smooth. Roll the dough into thin sheets and cut into medium-sized pieces or squares.

Gently add the dough pieces to the simmering stew. Cook uncovered for 15–20 minutes, stirring occasionally to prevent sticking, until the dough is fully cooked and tender. Adjust seasoning with salt and pepper if needed.
