Harees (Middle Eastern Wheat and Meat Porridge)

Harees is a traditional Middle Eastern dish that combines tender meat with soaked wheat, creating a creamy, hearty porridge. Often enjoyed during Ramadan, Eid, or special family gatherings, Harees is a comforting and nutritious meal that warms both the body and soul.

Ingredients

  • 2 cups whole wheat (soaked overnight)
  • 500 g chicken, lamb, or beef, bone-in for more flavor
  • 6 cups water or meat broth
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cinnamon (optional)
  • 2 tablespoons ghee or unsalted butter

Instructions

  1. Prepare the Wheat

    Drain the soaked wheat and rinse it under cold water. Set aside.

  2. Cook the Meat

    In a large pot, combine the meat with water or broth. Bring to a boil, then reduce heat and simmer until the meat is tender (about 1.5 to 2 hours). Remove the meat and set aside, reserving the cooking liquid.

  3. Combine Wheat and Meat

    Add the soaked wheat to the reserved cooking liquid. Cook over medium-low heat, stirring frequently to prevent sticking. Shred the meat finely and gradually stir it into the wheat mixture. Continue cooking and stirring for 1 to 1.5 hours until the mixture reaches a smooth, porridge-like consistency.

  4. Season and Add Fat

    Stir in salt, pepper, and optional cinnamon. Add ghee or butter and mix until fully incorporated. Adjust seasoning to taste.

  5. Serve

    Spoon Harees into serving bowls while hot. Optionally, drizzle with a little extra ghee or melted butter for richness.
