Machanka is a traditional Belarusian stew often referred to as a “dipping sauce” due to its rich, hearty texture. Made with a combination of tender meats, onions, and creamy sauce, this dish is typically served with pancakes or fresh bread for dipping. Perfect for a cozy family meal or a hearty dinner, Machanka is the epitome of comfort food from Eastern Europe.
Ingredients:
Meat and Broth:
1.1 lb (500 g) pork shoulder, cut into chunks
0.5 lb (250 g) pork ribs
0.5 lb (250 g) smoked sausage or ham
4 cups (1 liter) water
For the Sauce:
2 medium onions (0.6 lb / 300 g), finely chopped
3 tablespoons all-purpose flour (0.1 lb / 50 g)
2 cups (500 ml) broth from the meat
1 cup (250 ml) sour cream
2 tablespoons vegetable oil
1 teaspoon salt
½ teaspoon ground black pepper
Instructions:
Step 1: Cook the Meat In a large pot, combine pork shoulder, ribs, and smoked sausage. Cover with 4 cups (1 liter) of water and bring to a boil. Reduce heat to low, cover, and simmer for 1–1.5 hours until the meat is tender. Skim off any foam that forms. Remove the meat and set aside. Reserve 2 cups (500 ml) of the broth for the sauce.
Step 2: Prepare the Sauce In a skillet, heat vegetable oil over medium heat. Add the chopped onions and sauté until golden and soft, about 5–7 minutes. Sprinkle the flour over the onions and stir continuously for 2 minutes until the flour is lightly browned. Gradually add the reserved broth, stirring constantly to avoid lumps. Cook for 5 minutes until the sauce thickens.
Step 3: Combine the Ingredients Stir in the sour cream, salt, and pepper. Mix well. Add the cooked meat back into the skillet, ensuring it is fully coated in the sauce. Simmer for an additional 10 minutes to allow the flavors to meld together.
Serving: Serve Machanka hot with Belarusian pancakes (blini), fresh bread, or mashed potatoes. For a traditional experience, dip the bread or pancakes into the rich sauce and enjoy every bite.
