Immerse yourself in the rich cultural traditions of Fiji with Lovo, a traditional method of cooking that involves an underground oven. This communal cooking style creates a feast of smoky, tender, and flavorful dishes, perfect for celebrations and gatherings.
Ingredients:
5 lbs (2.3 kg) whole chicken or pork shoulder
2 lbs (0.9 kg) cassava (yucca), peeled and cut into chunks
2 lbs (0.9 kg) taro root, peeled and cut into chunks
2 lbs (0.9 kg) sweet potatoes, peeled and cut into chunks
2 lbs (0.9 kg) assorted vegetables (carrots, cabbage, bell peppers)
2 cups (0.45 kg) coconut cream
1/4 cup (0.11 kg) soy sauce
2 tablespoons minced garlic
2 tablespoons minced ginger
Salt and pepper to taste
Banana leaves or aluminum foil for wrapping
Instructions:
Prepare the Oven: Dig a pit about 2-3 feet deep and line it with stones. Light a fire in the pit and let it burn for about 2 hours until the stones are very hot. Marinate the Meat: In a large bowl, combine the soy sauce, minced garlic, minced ginger, salt, and pepper. Rub this mixture all over the chicken or pork. Wrap the Food: Wrap the marinated meat, cassava, taro, sweet potatoes, and vegetables individually in banana leaves or aluminum foil. Drizzle the coconut cream over the vegetables before wrapping. Layer the Food: Place a layer of hot stones at the bottom of the pit. Add the wrapped meat and vegetables on top of the stones. Cover with another layer of hot stones. Seal the Pit: Cover the food with banana leaves or a wet burlap sack, then add a thick layer of soil to seal the pit and keep the heat inside. Let it cook for about 3-4 hours. Uncover and Serve: Carefully uncover the pit, remove the wrapped packages, and unwrap them.
