Lolly Cake

Enjoy a sweet treat from New Zealand with Lolly Cake, a no-bake dessert that combines colorful candies with crushed biscuits and a creamy filling. Perfect for parties, afternoon tea, or a fun family dessert, Lolly Cake is easy to make and visually delightful.

Ingredients

  • 250 g plain biscuits (digestive or tea biscuits), crushed
  • 200 g pink and white marshmallows, chopped
  • 1 can (395 g) sweetened condensed milk
  • 50 g butter, melted
  • 1 teaspoon vanilla extract
  • Desiccated coconut, for rolling

Instructions

  1. Prepare the Mixture

In a large bowl, combine the crushed biscuits and chopped marshmallows. In a separate bowl, mix the sweetened condensed milk, melted butter, and vanilla extract until smooth. Pour the liquid mixture over the biscuits and marshmallows, stirring until everything is evenly coated.

  2. Shape the Cake

Transfer the mixture onto a large sheet of baking paper. Shape it into a log or rectangular block, pressing it firmly to ensure it holds together.

  3. Coat with Coconut

Roll the log in desiccated coconut until fully coated, using your hands to press the coconut gently onto the surface.

  4. Chill

Wrap the Lolly Cake in baking paper and refrigerate for at least 2–3 hours, or until firm.

  5. Serve

Slice into thick pieces and serve chilled. Lolly Cake is perfect as a colorful addition to dessert platters or as a fun snack for kids and adults alike.
