Liboke – Traditional Congolese Fish in Banana Leaves

Liboke is a classic Congolese dish where fish or meat is marinated, wrapped in banana leaves, and steamed or grilled to perfection. Ingredients

2 lb (900 g) tilapia or any firm white fish, cleaned and filleted

1 large onion, finely chopped

3 cloves garlic, minced

1-inch (2.5 cm) ginger, grated

2 green bell peppers, sliced

1 tomato, chopped

1 tbsp (15 ml) red palm oil or vegetable oil

1 lemon, juiced

1 tsp paprika

Salt and pepper to taste

2 large banana leaves (or foil as a substitute)

Instructions

Prepare the Marinade: In a bowl, combine the onion, garlic, ginger, green bell peppers, tomato, red palm oil, lemon juice, paprika, salt, and pepper. Mix well to create a flavorful marinade.

Marinate the Fish: Place the fish in the marinade, coating it thoroughly. Allow it to marinate for at least 30 minutes to absorb the flavors.

Wrap in Banana Leaves: Lay out the banana leaves and place the marinated fish in the center. Fold the leaves around the fish, creating a sealed package. Secure with string if necessary.

Cook: Preheat a grill to medium heat or use a steamer. Place the wrapped fish on the grill or in the steamer, cooking for 20-30 minutes or until the fish is fully cooked and flaky.

Serve: Carefully unwrap the banana leaves and serve the fish directly on a platter for an authentic presentation.
