Ingredients

For the Dough:

4 cups (500 g) all-purpose flour

1/2 cup (100 g) sugar

2 1/4 tsp (7 g) active dry yeast

1 cup (240 ml) warm milk

1/2 cup (115 g) butter, melted

2 large eggs

1/4 tsp (1 g) salt

1 tsp (5 ml) vanilla extract

For the Filling (choose one or combine):

Fruit: 1 cup (250 g) fruit preserves (apricot, plum, or cherry)

Poppy Seed: 1 cup (150 g) ground poppy seeds mixed with 1/2 cup (100 g) sugar

Sweet Cheese: 1 cup (250 g) ricotta or farmer's cheese mixed with 1/4 cup (50 g) sugar and 1 egg yolk

For the Topping:

1/2 cup (75 g) all-purpose flour

1/4 cup (50 g) sugar

1/4 cup (60 g) butter, softened

Instructions

Activate the Yeast: In a small bowl, mix the warm milk with 1 tablespoon of sugar and the yeast. Let it sit for 5-10 minutes until it becomes frothy.

Make the Dough: In a large bowl, combine the flour, remaining sugar, and salt. Add the yeast mixture, melted butter, eggs, and vanilla. Mix until a dough forms. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Filling: While the dough is rising, prepare your desired filling(s). For the sweet cheese filling, combine the ricotta, sugar, and egg yolk. For the fruit filling, have the preserves ready. For the poppy seed filling, mix ground poppy seeds with sugar.

Shape the Koláče: Once the dough has risen, punch it down and divide it into 12 equal portions. Roll each portion into a ball and flatten it slightly. Using your fingers, create a small well in the center of each dough round for the filling.

Add the Filling: Spoon 1-2 tablespoons of filling into the center of each Koláče. In a separate bowl, mix the topping ingredients (flour, sugar, and butter) and sprinkle over the tops of the Koláče.

Bake the Koláče: Preheat the oven to 350°F (175°C). Place the Koláče on a parchment-lined baking sheet, cover lightly with a towel, and let them rise for another 20-30 minutes. Bake for 15-20 minutes or until golden brown.
