1/2 cup warm water

In a mixing bowl, combine the ground meat, chopped onion, minced garlic, ground coriander, ground cumin, paprika, salt, and pepper. Mix well until thoroughly combined. In a separate bowl, prepare the dough by combining the flour and warm water. Knead until a smooth dough forms. Cover and let it rest for about 30 minutes. Divide the dough into small balls and roll each ball into a thin circle on a floured surface. Place a spoonful of the meat filling in the center of each dough circle. To shape the Khinkali, gather the edges of the dough circle and pinch them together at the top, creating a pleated dome. Make sure to leave a small opening at the top to allow steam to escape during cooking. Bring a large pot of salted water to a boil. Carefully drop the Khinkali into the boiling water and cook for about 8-10 minutes, or until they float to the surface and the dough is cooked through. Remove the Khinkali from the water using a slotted spoon and let them drain briefly. Serve the Khinkali hot, accompanied by a sprinkle of black pepper and a side of Georgian tkemali sauce or yogurt for dipping.
