Ingredients

1 lb (0.45 kg) kataifi dough (shredded phyllo)

1 cup (240 ml) unsalted butter, melted

2 lb (0.9 kg) sweet cheese (like Akawi or Mozzarella), shredded 1/2 cup (100 g) sugar

1 tsp rose water or orange blossom water

1 cup (200 g) sugar (for syrup)

1/2 cup (120 ml) water (for syrup)

1 tbsp lemon juice (for syrup)

1/2 tsp rose water or orange blossom water (for syrup)

1/4 cup (30 g) crushed pistachios, for garnish

Instructions

Prepare the Syrup: In a small saucepan, combine 1 cup of sugar with 1/2 cup of water. Bring to a boil over medium heat, stirring until the sugar is dissolved. Reduce the heat and let it simmer for 5 minutes. Remove from heat, stir in the lemon juice and rose water or orange blossom water, and set aside to cool.

Prepare the Cheese Filling: If using Akawi cheese, soak it in water for a few hours, changing the water several times to reduce its saltiness. Once ready, shred the cheese and mix it with 1/2 cup of sugar and 1 tsp of rose water or orange blossom water.

Prepare the Kataifi Dough: Preheat your oven to 350°F (175°C). Place the kataifi dough in a large bowl and gently pull apart the strands to loosen them. Pour the melted butter over the dough and mix well to coat all the strands evenly.

Assemble the Kanafi: Grease a large round baking dish (about 12 inches or 30 cm in diameter) with butter. Spread half of the kataifi dough in an even layer at the bottom of the dish. Press it down firmly. Spread the cheese mixture evenly over the dough, then cover with the remaining kataifi dough, pressing down gently.

Bake the Kanafi: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and crisp.

Add the Syrup: Once the Kanafi is baked, remove it from the oven and immediately pour the cooled syrup evenly over the top, ensuring it soaks through the layers. Let it sit for a few minutes to absorb the syrup.

Garnish and Serve: Garnish with crushed pistachios and cut into slices. Serve warm.
