Kalakukko is a traditional Finnish dish that combines fish and pork, baked inside a hearty rye bread crust. This savory pie hails from the region of Savonia and offers a taste of Finland's rich culinary heritage. Ingredients

  • 2 lbs (0.9 kg) fresh fish fillets (such as perch, pike, or salmon), boned and skinned
  • 1 lb (0.45 kg) pork belly, cut into small cubes
  • 4 cups (0.9 kg) rye flour
  • 2 cups (0.45 kg) all-purpose flour
  • 2 teaspoons salt (for dough)
  • 1 teaspoon salt (for filling)
  • 2 cups (0.48 liters) water
  • 4 tablespoons butter, melted

Instructions

  1. Prepare the Dough

    In a large mixing bowl, combine the rye flour, all-purpose flour, and 2 teaspoons of salt. Gradually add water while mixing until a firm dough forms. Knead the dough for about 5 minutes until smooth. Cover and let it rest for 30 minutes.

  2. Preheat Oven

    Preheat your oven to 375°F (190°C).

  3. Prepare the Filling

    Season the fish fillets and pork belly cubes with 1 teaspoon of salt.

  4. Roll Out the Dough

    Divide the dough into two equal parts. Roll out one part into a large oval shape, about 1/4-inch thick, to form the base.

  5. Assemble the Pie

    Place a layer of fish fillets in the center of the dough, leaving a border around the edges. Add a layer of pork belly cubes on top of the fish. Repeat the layers until all the filling is used.

  6. Seal the Pie

    Roll out the second part of the dough to cover the filling. Place it over the filling and seal the edges by pinching the dough together. Shape the pie into a loaf-like form.

  7. Bake

    Place the Kalakukko on a baking sheet. Brush the top with melted butter. Bake in the preheated oven for 4–5 hours. If the crust begins to darken too much, cover it with aluminum foil.

  8. Cool and Serve

    Once baked, let the Kalakukko cool slightly before slicing.
