Instructions:
Prepare the Dough: In a large mixing bowl, combine the rye flour, all-purpose flour, and 2 teaspoons of salt. Gradually add water while mixing until a firm dough forms. Knead the dough for about 5 minutes until smooth. Cover and let it rest for 30 minutes. Preheat Oven: Preheat your oven to 375°F (190°C). Prepare the Filling: Season the fish fillets and pork belly cubes with 1 teaspoon of salt. Roll Out the Dough: Divide the dough into two equal parts. Roll out one part into a large oval shape, about 1/4-inch thick, to form the base. Assemble the Pie: Place a layer of fish fillets in the center of the dough, leaving a border around the edges. Add a layer of pork belly cubes on top of the fish. Repeat the layers until all the filling is used. Seal the Pie: Roll out the second part of the dough to cover the filling. Place it over the filling and seal the edges by pinching the dough together. Shape the pie into a loaf-like form. Bake: Place the Kalakukko on a baking sheet. Brush the top with melted butter.
