Kalakukko is a traditional Finnish dish that combines fish and pork, baked inside a hearty rye bread crust. This savory pie hails from the region of Savonia and offers a taste of Finland's rich culinary heritage. Perfect for a hearty meal, Kalakukko is both filling and flavorful, showcasing the simplicity and deliciousness of Finnish cuisine.

2 lbs (0.9 kg) fresh fish fillets (such as perch, pike, or salmon), boned and skinned

1 lb (0.45 kg) pork belly, cut into small cubes

4 cups (0.9 kg) rye flour

2 cups (0.45 kg) all-purpose flour

2 teaspoons salt (for dough)

1 teaspoon salt (for filling)

2 cups (0.48 liters) water

4 tablespoons butter, melted

Prepare the Dough: In a large mixing bowl, combine the rye flour, all-purpose flour, and 2 teaspoons of salt. Gradually add water while mixing until a firm dough forms. Knead the dough for about 5 minutes until smooth. Cover and let it rest for 30 minutes. Preheat Oven: Preheat your oven to 375°F (190°C). Prepare the Filling: Season the fish fillets and pork belly cubes with 1 teaspoon of salt. Roll Out the Dough: Divide the dough into two equal parts. Roll out one part into a large oval shape, about 1/4-inch thick, to form the base. Assemble the Pie: Place a layer of fish fillets in the center of the dough, leaving a border around the edges. Add a layer of pork belly cubes on top of the fish. Repeat the layers until all the filling is used. Seal the Pie: Roll out the second part of the dough to cover the filling. Place it over the filling and seal the edges by pinching the dough together. Shape the pie into a loaf-like form. Bake: Place the Kalakukko on a baking sheet. Brush the top with melted butter. Bake in the preheated oven for 4-5 hours. If the crust begins to darken too much, cover it with aluminum foil. Cool and Serve: Once baked, let the Kalakukko cool slightly before slicing.

Serve Kalakukko warm, sliced into thick pieces. It can be enjoyed on its own or with a side of potatoes and a fresh salad. The flavors meld beautifully, offering a taste of Finnish tradition in every bite.

Kalakukko is a unique and hearty dish that embodies the rustic charm of Finnish cuisine. With its savory filling encased in a wholesome rye crust, it's perfect for a substantial meal that impresses with its simplicity and depth of flavor.
