2 cups (0.45 kg) rye flour

1/2 cup (0.11 kg) all-purpose flour

1 teaspoon salt

1 cup (0.24 liters) water

For the Filling:

1 cup (0.24 liters) short-grain rice

2 cups (0.48 liters) water

4 cups (0.95 liters) whole milk

1 teaspoon salt

2 tablespoons butter

For the Egg Butter:

4 hard-boiled eggs

1/4 cup (0.06 kg) butter, softened

Salt to taste

Instructions:

Prepare the Filling: Rinse the rice under cold water. In a large saucepan, bring 2 cups of water to a boil. Add the rice and cook until the water is absorbed. Add the milk, reduce the heat to low, and simmer, stirring occasionally, until the rice is soft and creamy (about 40 minutes). Stir in the butter and salt, then let it cool.

Make the Dough: In a large bowl, combine the rye flour, all-purpose flour, and salt. Gradually add the water, mixing until a firm dough forms. Knead the dough until smooth, about 5 minutes. Divide the dough into 12 equal pieces and roll each piece into a ball.

Shape the Pastries: Preheat your oven to 450°F (230°C). Roll each ball of dough into a thin oval on a floured surface. Place a generous spoonful of the rice filling in the center of each oval, spreading it out but leaving the edges clear. Fold the edges of the dough over the filling, pinching and pleating to seal the sides, leaving the center exposed.

Bake: Place the filled pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, until the edges are crispy and lightly browned.

Make the Egg Butter: While the pastries are baking, prepare the egg butter. Chop the hard-boiled eggs finely and mix with the softened butter. Season with salt to taste.
