Jalebi Recipe: A Sweet and Crispy Indian Dessert Delight

For Jalebi Batter:

1 cup all-purpose flour

2 tablespoons chickpea flour (besan)

1/4 teaspoon baking powder

1 cup yogurt

Water, as needed

For Sugar Syrup:

2 cups sugar

1 cup water

1/4 teaspoon cardamom powder

Saffron strands (optional)

Rose water (optional)

For Frying:

Vegetable oil or ghee


In a mixing bowl, combine all-purpose flour, chickpea flour, baking powder, yogurt, and turmeric powder. Mix well to form a smooth batter. Add water as needed to achieve a thick, pourable consistency. Cover the bowl and let the batter ferment in a warm place for 8-10 hours or overnight. In a saucepan, combine sugar and water to make the sugar syrup. Bring to a boil, stirring until the sugar dissolves completely. Add cardamom powder, saffron strands (if using), and rose water (if using) to the sugar syrup. Simmer for 5-7 minutes until slightly thickened. Remove from heat and keep warm. Heat vegetable oil or ghee in a deep frying pan over medium heat. Pour the fermented batter into a piping bag or squeeze bottle with a narrow nozzle. Squeeze the batter in a spiral shape into the hot oil, starting from the center and working outward. Fry the Jalebis until they are crispy and golden brown on both sides. Remove from the oil and immediately dip them into the warm sugar syrup. Allow the Jalebis to soak in the syrup for a few seconds, then remove and place them on a plate lined with parchment paper to drain excess syrup.


Serve Jalebis warm or at room temperature, garnished with chopped nuts or edible silver foil (varak). Enjoy these sweet and crispy treats as a dessert or snack, paired with a cup of chai or enjoyed on their own.
