Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and chopped onion, and sauté until fragrant and lightly browned. Add mixed vegetables to the skillet and stir-fry until they are tender-crisp. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Allow the eggs to cook for a minute or two, then scramble them until fully cooked. Add cooked rice to the skillet, breaking up any clumps with a spatula.
