  • 1/2 cup (0.25 lb / 0.11 kg) almonds (optional)
  • Ice cubes, for serving
  • Ground cinnamon, for garnish

Instructions

  1. Soak the Rice

    Rinse the rice under cold water until the water runs clear. In a large bowl, combine the rinsed rice, cinnamon sticks, and 4 cups of water. If using almonds, add them as well. Cover and let soak at room temperature for at least 4 hours, or overnight for best results.

  2. Blend the Mixture

    Remove the cinnamon sticks. Transfer the rice and water mixture to a blender. Blend on high speed until the rice is finely ground and the mixture is smooth, about 2-3 minutes.

  3. Strain the Liquid

    Using a fine-mesh sieve or cheesecloth, strain the mixture into a pitcher to remove the solids. Press or squeeze to extract as much liquid as possible.

  4. Sweeten the Horchata

    Stir in the sugar, vanilla extract, and milk (if using) until well combined. Adjust the sweetness to taste.

  5. Chill the Drink

    Refrigerate the horchata for at least 1 hour before serving, allowing the flavors to meld.
