2 lbs beef chuck roast, trimmed and cut into chunks

4 cloves garlic, minced

2 cups beef broth

2 bay leaves

1 teaspoon dried oregano

1 teaspoon ground cumin

Salt and pepper to taste

Heat the vegetable oil in a large pot over medium heat. Add the beef chunks and cook until browned on all sides. Add the chopped onions, minced garlic, diced tomatoes, diced bell peppers, and sliced carrots to the pot. Cook until the vegetables are softened. Pour in the beef broth and add the bay leaves, dried oregano, ground cumin, salt, and pepper. Stir to combine. Bring the stew to a simmer, then reduce the heat to low. Cover and let it cook for about 2-3 hours, or until the beef is tender and falls apart easily. Once the beef is cooked, use two forks to shred it into smaller pieces directly in the pot. Continue cooking the stew for another 30 minutes to allow the flavors to meld together. Serve the Hilachas hot over cooked white rice. Garnish with chopped cilantro before serving.
