Authentic Feijoada Recipe

Feijoada is a rich and hearty bean stew, considered the national dish of Brazil. Packed with black beans, smoky sausages, and tender cuts of pork, this comfort food is traditionally enjoyed with rice, orange slices, and farofa. Ingredients:

1 lb (450 g) dried black beans, soaked overnight

1/2 lb (225 g) pork shoulder, cut into chunks

1/2 lb (225 g) smoked sausage or chorizo, sliced

1/4 lb (115 g) bacon, chopped

1/4 lb (115 g) pork ribs, cut into pieces

1 large onion, diced

3 cloves garlic, minced

2 bay leaves

1 tsp (5 g) paprika

1/2 tsp (2.5 g) black pepper

Salt to taste

4 cups (1 L) water or chicken stock

2 tbsp (30 ml) olive oil

Instructions:

Prepare the Beans: Rinse the soaked beans and set them aside.

Cook the Meat: Heat olive oil in a large pot over medium heat. Add bacon and cook until crispy. Remove and set aside. In the same pot, brown the pork shoulder and ribs. Add the sausage and cook until slightly browned. Remove all meats and set aside.

Sauté the Aromatics: In the same pot, add onions and garlic, sautéing until soft and fragrant.

Combine Ingredients: Add the beans, cooked meats, bay leaves, paprika, black pepper, and water or chicken stock to the pot. Stir well.

Simmer the Stew: Bring to a boil, then reduce heat to low. Cover and simmer for 2-3 hours, stirring occasionally, until the beans are tender and the flavors have melded. Add more water if necessary to prevent sticking.

Season to Taste: Adjust salt and seasoning as needed. Remove bay leaves before serving.

Serving: Serve Feijoada hot with steamed white rice, orange slices, farofa (toasted cassava flour), and collard greens. Pair with a refreshing caipirinha for a true Brazilian dining experience.
