Ingredients:

2 lbs (900 g) fresh or frozen conch (cleaned and cut into chunks)

1/4 cup (60 ml) olive oil

1 large onion, diced

3 cloves garlic, minced

2 large tomatoes, chopped

1 cup (240 ml) tomato sauce

1/2 lb (225 g) potatoes, diced

1/2 lb (225 g) carrots, diced

1 small green bell pepper, diced

1 tsp (5 g) paprika

1/2 tsp (2.5 g) black pepper

1/2 tsp (2.5 g) dried thyme

2 cups (500 ml) water or fish stock

Salt to taste

Fresh parsley or cilantro for garnish

Instructions:

Prepare the Conch: If using fresh conch, tenderize it by pounding it with a mallet. Rinse thoroughly.

Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Sauté onions and garlic until fragrant and translucent.

Build the Base: Add chopped tomatoes, tomato sauce, paprika, black pepper, and thyme. Stir well and cook for 5 minutes to combine flavors.

Add Conch and Vegetables: Add the conch chunks, potatoes, carrots, and green bell pepper. Pour in water or fish stock, ensuring the ingredients are covered.

Simmer the Stew: Bring to a boil, then reduce heat to low. Cover and simmer for 1.5-2 hours, stirring occasionally, until the conch is tender and the sauce thickens.

Adjust Seasoning and Garnish: Taste and adjust salt or spices as needed. Garnish with fresh parsley or cilantro.

Serving: Serve Buzio hot with steamed rice, crusty bread, or boiled cassava for a truly Cape Verdean experience. Pair with a light white wine or fresh juice for a balanced meal.
