Fahsa (Indonesian Spiced Beef Stew)

Experience the bold and aromatic flavors of Indonesian cuisine with Fahsa, a traditional beef stew slow-cooked with spices and served in a rich, savory broth. This comforting dish is perfect for family meals or special gatherings, offering a warm and satisfying taste of Indonesia.

Ingredients

  • 1 kg beef shank or brisket, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 5 cloves garlic, minced
  • 3 cm fresh ginger, grated
  • 3 cm fresh turmeric, grated (or 1 teaspoon turmeric powder)
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 2 bay leaves
  • 2-3 red chilies, sliced (adjust to taste)
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon sugar
  • 500 ml beef broth or water
  • 200 ml coconut milk
  • 2 tomatoes, chopped
  • Fresh lime juice (optional, for serving)
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

  1. Prepare the Spices

    Heat vegetable oil in a large pot over medium heat. Sauté the onion until translucent, then add garlic, ginger, turmeric, and red chilies. Cook until fragrant, about 2–3 minutes.

  2. Cook the Beef

    Add the beef chunks to the pot and sear until lightly browned on all sides. Sprinkle in coriander, cumin, black pepper, salt, and sugar, stirring to coat the meat with spices.

  3. Simmer the Stew

    Add lemongrass, kaffir lime leaves, bay leaves, and beef broth. Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours, or until the beef is tender and infused with the spices.

  4. Add Coconut Milk and Tomatoes

    Stir in coconut milk and chopped tomatoes, simmering for an additional 15–20 minutes. Adjust seasoning with salt and pepper as needed.

  5. Serve

    Ladle Fahsa into bowls and garnish with fresh cilantro or parsley. Serve with steamed rice or flatbread, and a squeeze of lime juice if desired for a bright finish.
