Ingredients
- 2 lb (0.9 kg) goat or beef, cut into bite-sized pieces
- 8 cups (2 liters) water
- 2 large potatoes, peeled and cubed

- 2 large tomatoes, diced
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 2 green chilies, sliced
- 2 tbsp (30 ml) vegetable oil
- 1 tsp (5 g) ground cumin
- 1 tsp (5 g) ground coriander
- 1/2 tsp (2.5 g) ground turmeric
- 1 tsp (5 g) black pepper
- 2 bay leaves
- Salt, to taste
- 1/4 cup (60 g) fresh cilantro, chopped (for garnish)
- 1 lime, cut into wedges (for serving)

Prepare the Meat
In a large pot, heat the vegetable oil over medium heat. Add the meat pieces and cook until browned on all sides, about 5-7 minutes. Remove the meat and set it aside.

Sauté the Aromatics
In the same pot, add the chopped onions, garlic, and green chilies. Sauté until the onions are soft and translucent, about 5 minutes. Add the cumin, coriander, turmeric, and black pepper. Stir and cook for another 2 minutes until the spices are fragrant.

Return the browned meat to the pot. Add the diced tomatoes, potatoes, carrots, and bay leaves. Pour in the water, stirring to combine all ingredients. Bring the mixture to a boil, then reduce the heat to low. Cover and let the soup simmer for 1 to 1.5 hours, or until the meat is tender and the vegetables are cooked through.

Taste the soup and adjust the seasoning with salt and more black pepper if needed. If the soup is too thick, you can add a little more water to reach your desired consistency.
