Durban Curry

- 2 tablespoons curry powder (preferably Durban-style)
- 1 teaspoon turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon chili powder (adjust to taste)
- 2 large tomatoes, chopped
- 1 cup water or stock
- 1/2 cup coconut milk (optional, for creaminess)
- Salt to taste
- Fresh coriander (cilantro), chopped, for garnish
- Lemon wedges, for serving

Prepare the Base
Heat the vegetable oil in a large pot over medium heat. Add the onions and sauté until golden brown. Stir in the garlic, ginger, and green chilies, cooking for another 2 minutes until fragrant.
