Ingredients

  • 2 lbs chicken, lamb, or beef, cut into bite-sized pieces
  • 3 tablespoons vegetable oil
  • 2 large onions, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons ginger, grated
  • 2-3 fresh green chilies, chopped
  • 2 tablespoons curry powder (preferably Durban-style)
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder (adjust to taste)
  • 2 large tomatoes, chopped
  • 1 cup water or stock
  • 1/2 cup coconut milk (optional, for creaminess)
  • Salt to taste
  • Fresh coriander (cilantro), chopped, for garnish
  • Lemon wedges, for serving

Instructions

  1. Prepare the Base

    Heat the vegetable oil in a large pot over medium heat. Add the onions and sauté until golden brown. Stir in the garlic, ginger, and green chilies, cooking for another 2 minutes until fragrant.

  2. Add the Spices

    Mix in the curry powder, turmeric, coriander, cumin, and chili powder. Stir well to coat the onions and release the flavors of the spices.

  3. Cook the Meat

    Add the meat to the pot, stirring to coat it evenly with the spice mixture. Cook for 5–7 minutes until the meat begins to brown.

  4. Simmer the Curry

    Add the chopped tomatoes and water or stock. Bring to a boil, then reduce the heat to low and cover. Simmer for 45 minutes to 1 hour, or until the meat is tender and the sauce has thickened. If using coconut milk, stir it in during the last 10 minutes of cooking.

  5. Season and Garnish

    Add salt to taste and stir well. Remove from heat and garnish with fresh coriander. Serve with lemon wedges on the side.
