Draniki, also known as Belarusian potato pancakes, are crispy, golden delights made from grated potatoes. A staple of Eastern European cuisine, these pancakes are simple yet incredibly satisfying. Ingredients

Main Ingredients:
  • 2.2 lb (1 kg) potatoes, peeled
  • 1 medium onion (0.3 lb / 150 g), finely grated
  • 2 large eggs
  • 2 tablespoons all-purpose flour (optional)
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ cup (120 ml) vegetable oil for frying

Instructions

  1. Step 1: Prepare the Potato Mixture

    Grate the potatoes using the fine side of a box grater or a food processor. Place the grated potatoes in a clean kitchen towel and squeeze out the excess moisture. In a large mixing bowl, combine the grated potatoes with the grated onion. Add the eggs, flour (if using), salt, and pepper. Mix until well combined.

  2. Step 2: Fry the Pancakes

    Heat vegetable oil in a large skillet over medium heat. Scoop 2–3 tablespoons of the potato mixture and flatten it into a pancake shape in the skillet. Fry for 3–4 minutes on each side or until golden brown and crispy. Transfer to a plate lined with paper towels to drain excess oil.

  3. Step 3: Repeat and Keep Warm

    Continue frying the remaining potato mixture, adding more oil as needed. Keep the cooked Draniki warm in an oven preheated to 200°F (90°C) while you finish the batch.

Serving

Serve Draniki hot with a dollop of sour cream or applesauce on the side. For a heartier meal, pair them with smoked salmon, sautéed mushrooms, or a fresh salad.
