Dholl Puri (Mauritian Flatbread with Split Peas)

Ingredients

For the Filling:
  • 1 cup yellow split peas (dholl), soaked overnight
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon chili powder (optional)
  • Salt to taste
  • 2 tablespoons vegetable oil
For the Dough:
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup water (adjust as needed)
  • 2 tablespoons vegetable oil or melted butter
For Cooking:
  • Additional vegetable oil or ghee for cooking

Instructions

  1. Prepare the Split Pea Filling

    Drain and rinse the soaked split peas. Cook in boiling water until soft, then drain completely. Mash the cooked peas into a smooth mixture. Heat 2 tablespoons of oil in a pan, add cumin seeds, turmeric, chili powder, and salt. Stir in the mashed peas and cook for 3–5 minutes until well combined. Set aside to cool.

  2. Make the Dough

    In a large bowl, mix flour and salt. Gradually add water and oil, kneading until you form a smooth, pliable dough. Cover and let rest for 20–30 minutes.

  3. Assemble the Dholl Puri

    Divide the dough and filling into equal portions. Roll a portion of dough into a small disc, place a portion of filling in the center, then fold the dough around it to enclose the filling. Gently roll the stuffed dough into a thin circle, being careful not to tear it.

  4. Cook the Dholl Puri

    Heat a skillet or griddle over medium heat. Cook each Dholl Puri for 2–3 minutes on each side, brushing lightly with oil or ghee, until golden brown spots appear.

Serving

Serve Dholl Puri hot with your favorite curry, pickles, or chutneys. It can also be enjoyed with a simple sprinkle of chopped onions, chili, and lime for an authentic street-food experience.
