Crabbacks are a beloved Caribbean delicacy, where the flavorful meat of crabs is mixed with a blend of spices, herbs, and breadcrumbs, then stuffed back into the cleaned crab shells and baked to perfection. This dish is often served as a festive appetizer or a luxurious entrée, showcasing the rich seafood flavors of the Caribbean. Crabbacks are perfect for special occasions or whenever you want to indulge in a taste of the islands.
Ingredients
2 lbs (0.9 kg) crab meat, cooked and picked
1/2 cup (0.12 liters) heavy cream
1/2 cup (0.12 kg) breadcrumbs
1/4 cup (0.06 kg) butter
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp (15 g) fresh parsley, chopped
1 tsp (5 g) Dijon mustard
1 tsp (5 g) Worcestershire sauce
1/2 tsp (2.5 g) cayenne pepper
Salt and black pepper, to taste
1/4 cup (0.06 kg) grated Parmesan cheese (optional)
Cleaned crab shells, for stuffing
Instructions
Prepare the Filling: Melt the butter in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
Combine Ingredients: Add the crab meat to the skillet and stir gently to combine with the onion and garlic. Mix in the Dijon mustard, Worcestershire sauce, cayenne pepper, and fresh parsley. Season with salt and black pepper to taste.
Add Cream and Breadcrumbs: Pour in the heavy cream and stir until the mixture is well combined and heated through. Gradually add the breadcrumbs, stirring constantly until the mixture thickens and holds together. If the mixture is too wet, add more breadcrumbs if it’s too dry, add a bit more cream.
Stuff the Crab Shells: Preheat your oven to 375°F (190°C). Carefully spoon the crab mixture into the cleaned crab shells, packing it tightly. If desired, sprinkle the tops with grated Parmesan cheese for an extra golden crust.
Bake: Place the stuffed crab shells on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the tops are golden and bubbling.
Cool Slightly: Once baked, remove the crabbacks from the oven and allow them to cool slightly before serving.

Crabbacks are best served warm, straight out of the oven. They make an elegant appetizer or can be served as a main course with a side salad or rice. For a true Caribbean experience, pair them with a zesty tropical salsa or a splash of lime juice. The rich, savory filling inside the crispy crab shells will be a hit with seafood lovers.
