Coddle (Irish Stew)

Savor the hearty comfort of traditional Irish cuisine with Coddle, a rustic stew that brings together tender sausages, bacon, and potatoes in a rich, flavorful broth. Perfect for cozy family dinners or chilly evenings, Coddle is a warming, satisfying dish that celebrates Ireland’s culinary heritage.

Ingredients

  • 6 pork sausages
  • 6 slices of streaky bacon, chopped
  • 4 large potatoes, peeled and sliced
  • 2 large onions, sliced
  • 3 cups chicken or vegetable stock
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients

Slice the onions and potatoes. Chop the bacon into bite-sized pieces. Keep the sausages whole.

  2. Layer the Coddle

In a large, heavy-bottomed pot, layer half of the onions, potatoes, and bacon. Place the sausages on top, then layer the remaining onions, potatoes, and bacon over the sausages. Season each layer lightly with salt and pepper.

  3. Add Stock and Simmer

Pour the stock over the layered ingredients. Dot with butter. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, or until the potatoes are tender and the flavors meld beautifully.

  4. Serve

Carefully spoon the Coddle into bowls, ensuring each serving has sausages, bacon, potatoes, and onions. Garnish with freshly chopped parsley for a touch of color and freshness.

Serving

Serve Coddle with crusty bread or traditional soda bread to soak up the rich broth. This comforting Irish classic is perfect for warming the heart and soul on any day.
