Chole Bhature (Spicy Chickpeas with Fluffy Fried Bread)

Ingredients
For the Chole (Chickpeas):
- 1 cup dried chickpeas (or 2 cups canned chickpeas, drained)
- 2 tablespoons oil
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1 teaspoon ginger-garlic paste
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 1/2 teaspoon amchur (dry mango powder)
- Salt to taste
- 2 cups water
- Fresh coriander leaves, chopped (for garnish)
For the Bhature (Fried Bread):
- 2 cups all-purpose flour
- 2 tablespoons semolina (optional, for extra crispiness)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons yogurt
- Water, as needed to knead the dough
- Oil for deep frying

Prepare the Chickpeas (Chole)
If using dried chickpeas, soak them overnight in water. Boil until soft (about 45 minutes to 1 hour) or use a pressure cooker for faster cooking. If using canned, rinse and drain. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown. Stir in ginger-garlic paste and green chilies, cooking for 1–2 minutes. Add tomato puree, turmeric, coriander powder, red chili powder, and salt. Cook until the oil separates from the masala. Add boiled chickpeas and 2 cups of water. Simmer for 15–20 minutes to allow the flavors to meld. Stir in garam masala and amchur powder. Cook for another 2–3 minutes. Garnish with fresh coriander leaves.

Prepare the Bhature (Fried Bread)
In a large bowl, combine flour, semolina, baking powder, baking soda, and salt. Mix well. Add yogurt and knead into a soft, smooth dough, adding water as needed. Cover with a damp cloth and let it rest for 1–2 hours. Divide the dough into small balls and roll each into a flat circle. Heat oil in a deep frying pan over medium-high heat. Fry each rolled dough until it puffs up and turns golden brown on both sides. Drain on paper towels.
