Ingredients
- 2 1/4 tsp active dry yeast (0.25 oz / 7 g)
- 1 1/2 cups warm water (110°F / 45°C) (0.35 l)
- 1/2 cup granulated sugar (0.11 kg)
- 1 tsp salt
- 2 large eggs
- 1 cup evaporated milk (0.24 l)
- 7 cups all-purpose flour (0.88 kg)
- 1/4 cup shortening (0.057 kg)
- Vegetable oil for frying
- 2 cups powdered sugar (0.24 kg)
Instructions
-
Activate the Yeast
In a large bowl, dissolve the yeast in warm water. Let it sit for about 10 minutes until it becomes frothy.
-
Prepare the Dough
Add the granulated sugar, salt, eggs, and evaporated milk to the yeast mixture. Mix well. Gradually add 4 cups (0.5 kg) of the flour and mix until smooth. Add the shortening and continue mixing while adding the remaining flour until the dough is smooth and elastic.
-
Rest the Dough
Cover the bowl with plastic wrap or a damp cloth and refrigerate for at least 2 hours, or overnight, to let the dough rise.
-
Roll and Cut the Dough
On a lightly floured surface, roll out the dough to a thickness of 1/4 inch (0.6 cm). Cut into 2 1/2 inch (6.4 cm) squares using a knife or pizza cutter.
-
Heat the Oil
In a deep fryer or large, heavy-bottomed pot, heat the vegetable oil to 360°F (182°C).
-
Fry the Beignets
Carefully drop a few squares of dough into the hot oil, frying them in batches. Fry each beignet for about 2-3 minutes on each side until they are puffed up and golden brown. Use a slotted spoon to remove the beignets and place them on a plate lined with paper towels to drain.
-
Dust with Sugar
Generously dust the warm beignets with powdered sugar before serving.
Serving
Serve the beignets hot with a cup of coffee or a café au lait for an authentic New Orleans experience. They are best enjoyed fresh and warm, straight from the fryer.
